The summer season is in full swing and we love entertaining, hosting guests and having impromptu get-togethers with friends. This however requires us to be able to easily whip up something that looks amazing and tastes even better! Our go-to appetizer is featured below and boy is it delicious!


Not only does this Roasted Red Pepper and Tomato Bruschetta look spectacular, it also tastes amazing and it's absolutely irresistible, particularly because of the fresh, seasonal ingredients used like the green herbs, juicy ripe tomatoes and sweet red peppers.

The piece de resistance however is the Stella® Fresh Mozzarella Cheese with it's fresh, soft and delicate texture, bursting with milky flavor that easily takes you back to the Italian countryside where Mozzarella was originally handmade. Roasted Red Pepper, Tomato & Mozarella Cheese Bruschetta Recipe

1. Ingredients:

12 Mini Nan Bread Rounds
2   Medium Sized, Ripe Tomatoes
1   Large Sweet Red Pepper
2   Tablespoons of Extra Virgin Olive Oil
1   Clove of Garlic
1/2 an Onion
1   Sprig of Fresh Rosemary
5   Sprigs Of Fresh Thyme
1   Pinch of Salt
1   Pinch of Ground Black Pepper

2. Preparation Time: 

Prepping Ingredients: 5 Minutes
Cook Time:                5 Minutes
Plating Time:             5 Minutes

Total Time to make this dish: 15 Minutes



3. Directions:

1. Pit tomatoes to remove center and seeds. Then cut each tomato into six even circular slices and rinse to remove seeds.

2. Pit sweet red pepper to remove center. Then cut into twelve thin circular slices and rinse to remove any remaining seeds.

3. Peel and thinly dice onion and garlic.

4. Create a herb infused olive oil by pouring the extra virgin olive oil into a frying pan or skillet on medium heat. Add the onions, garlic, rosemary, thyme, salt and pepper. Occasionally saute to prevent herbs from burning. Remove from heat after 5 minutes and transfer to small serving bowl. 

5. Use one teaspoon of your herb infused olive oil to baste your frying pan. Once it's heated roast your sweet peppers and then your tomato slices until they are lightly charred.

6. Cut your Stella Mozzarella Cheese into 12 even, circular slices. Cut away the top and bottom tips of the cheese and place them aside for grating on top of your plated appetizers.

7. Lightly toast you Nan bread. Then plate and serve all ingredients as directed below.

4. Plating: 

If you are hosting a summer soiree, the presentation and display of your food will help to enhance your dinner table and stir the appetite of your guests. Plate each Bruschetta individually as shown in the photo below by:
  • Plating the the Nan bread first, then baste the top side with the herb infused olive oil. 
  • Place a slice of roasted red pepper on top of your Nan.
  • Add a slice of Mozzarella cheese inside the pepper. 
  • Top it off  by placing a slice of tomato on the Mozzarella. 
  • Garnish with the tip of a rosemary sprig.
  • Sprinkle a few shavings of grated mozzarella to finish it off.

5. Serving Suggestions:

This recipe serves up to 12 people, tweak as needed for smaller or larger parties. You can also display the finished ingredients as shown below and allow your guests to creatively plate and stack their own delicious Bruschetta bites. Serve with a glass of Sauvignon Blanc for the perfect appetizer and wine pairing.

  5. This is a wonderful appetizer, it looks so tasty! We also love making bruschette,but I use regular brown bread that I slice myself.

    1. Thank you Natalia, we love using regular bread as well but the Nan rounds shape and taste make it even better. You should try it sometime and it's available in wholewheat as well :).
