Appetizers/Hors d’Oeuvres:

1. Pears With Blue Cheese and Prosciutto

Ingredients
2 pears (such as Bosc or Bartlett), each cut into 8 wedges.
2 teaspoons fresh lemon juice.
1 cup arugula.
3 ounces blue cheese, cut into small pieces.
6 ounces thinly sliced prosciutto, cut in half lengthwise.

Directions
1. In a large bowl, toss the pears and lemon juice. 
2. Layer a slice of pear, an arugula leaf, and a piece of cheese on a piece of prosciutto and roll up.


2. Fondue
Serves 6| Hands-On Time: 15m| Total Time: 15m

Ingredients
1 clove garlic, halved.
1/2 cup fruity white wine, such as Gewurztraminer.
1 tablespoon lemon juice.
1 teaspoon Dijon mustard.
1 pound Jarlsberg or Emmental, grated (8 cups).
1 pound Italian Fontina, grated (8 cups).
1 pound sourdough bread, cut into 1-inch cubes.
1 pound boiled small red potatoes.

Directions

1. Rub the inside of a medium saucepan with the garlic clove; discard.
2. Add the wine, lemon juice, and mustard and whisk. Heat to simmering over medium heat. Add the cheese, 1 cup at a time, and stir with a wooden spoon until smooth.
3. Pour into a fondue pot, or set the saucepan on a trivet. Serve immediately with the bread and potatoes.


Salad:
1. Frisée, Bacon, and Goat-Cheese Salad
Serves 15| Hands-On Time: 30m| Total Time: 30m

Ingredients
1/3 cup pine nuts or walnuts.
1/3 pound sliced bacon.
1/3 cup olive oil.
1 heaping tablespoon Dijon mustard.
1 tablespoon lemon juice.
1 teaspoon sugar.
1/4 teaspoon kosher salt.
1/8 teaspoon freshly ground pepper.
1 pound frisee, curly endive, or chicory.
3 ounces goat cheese, crumbled.

Directions

1. Toast the nuts in a large, dry skillet over low heat, stirring frequently, until golden, about 5 minutes. Remove the nuts.
2. Cut the bacon into 1/2-inch pieces and add to the skillet. Cook over medium heat until crisp. Remove the bacon with a slotted spoon and drain on paper towels.
3. Whisk the oil, mustard, lemon juice, sugar, salt, and pepper in a medium bowl. Tear the frisée into small pieces and place in a serving bowl. Add the bacon, nuts, and goat cheese. Toss the salad with the dressing.


Dessert:
1. Butterscotch Bananas With Vanilla Ice Cream

Ingredients
1/2 cup pecans.
1/2 cup (1 stick) unsalted butter, cut into pieces.
1 cup dark brown sugar.
1/4 teaspoon ground cinnamon.
6 bananas, peeled and sliced on the diagonal.
1/4 cup dark rum.
2 pints vanilla ice cream.

Directions
1. Heat oven to 375° F.
2. Spread the pecans on a rimmed baking sheet and toast, tossing occasionally, until fragrant, 5 to 6 minutes; roughly chop.
3. Melt the butter in a large skillet over medium-high heat. Add the sugar and cinnamon and cook, whisking occasionally, until smooth, 4 to 5 minutes.
4. Gently stir in the bananas. Remove from heat and add the rum. Using a match, carefully ignite the mixture and wait until the flame goes out. Stir in the pecans.
5. Serve the bananas and sauce over the ice cream.
