Refreshing Watermelon and Cucumber-Mint Salad

(Makes 10 to 12 servings)
Ingredients
1 medium-size watermelon, preferably seedless
6 green onions
1/4 cup (50 mL) coarsely chopped fresh mint leaves
2 English cucumbers
1/4 cup (50 mL) each balsamic vinegar and olive oil
1 tsp (5 mL) each salt and ground black pepper

Directions:
- Cut melon chunks into large, thick triangular pieces.
- Thinly slice green onions diagonally and Chop mint.
- Slice cucumbers lengthwise into quarters, then slice diagonally into pieces about 1/2 inch (1 cm) long.
- In a large bowl, whisk vinegar with olive oil, salt and pepper.
- Add watermelon and cucumbers in batches and gently toss until evenly mixed.
- Place in drained watermelon shell and Sprinkle with green onions and mint.
- Serve right away or refrigerate. Enjoy!
